      • Given our vibrant coastline, we use fresh Atlantic prawns, lobster chunks, and often fried croaker or red fish. Many locals love adding dried shrimp powder or “shito” flavors to deepen the umami profile.

      While Jasmine is used, it’s cooked to be incredibly fragrant, often steamed with a bit of ginger and onion before hitting the wok.
